What makes this Sauvignon Blanc from Domaine Thomas stand out is the lush fruit character and texture achieved in the vineyards. A classic minerality lingers through the finish with crushed rock and refined herbal notes of balanced pyrazines (pyrazines express green, grassy notes).

Not your ordinary Sancerre, Thomas is certified organic with pending Demeter biodynamic certification, expected December 2023. The wine is fermented with the wild yeast and will age on the lees in a combination of steel tank and amphora for 6-8 months. The Thomas family has been growing grapes and making wine in Sancerre since 1670. Julien represents the 13th generation, farming 16 hectares in the village of Verdigny.
“Grand’Chaille” Sancerre

The Grand’Chaille is a reference to the flinty soils (Silex) of this vineyard and offers up subtle differences in both texture and flavor. Expressive with zesty citrus fruits, pear, white flowers and white pepper, the rocky minerality lingers throughout with a smoky flint character. This wine delivers pure terroir expression with a satisfying and powerful finish.

“Ultimus” Sancerre

The is the cream of the crop, a small parcel of the oldest vines with the best exposure. This cuvée represents a Sauvignon Blanc that ages well with complexity and depth. Rich and powerful with ripe pear, quince, citrus, and a minerality reminiscent of toasted almond. The round, rich character is kept perfectly in check by a nervy acidity maintained throughout the finish.

This is a thriving ecosystem that favors the use of native yeast and true terroir expression. With old vines, over 60 years of age, and some green harvesting, the small yields produce complex and developed fruit. This vineyard is typically the last picked in the vintage, hence the name “Ultimate”, the last and superior selection.

Pinot Noir

Pinot Noir is the main red grape of Sancerre. It represents about 20% of plantings and has a particular mineral character unique to this region with herbal undertones and a crunchy texture. The nose expresses nervy fruits of raspberry and black cherry and are complemented by violet flowers, hints of oak, pepper, and crushed rock. The energetic finish alludes to great aging potential.

This Pinot Noir comes from two tiny parcels that are cultivated with the utmost care. Intense green harvesting with multiple passings (up to 30% depending on vintage) ensures that the phenolic ripeness aligns with the sugar ripeness. Punch Downs during fermentation with native yeast brings a real deep color and texture not often found in Sancerre Rouge. One year in oak allows the wine to settle naturally without fining or filtering.
